Solina Whole Wheat Flour
Solina is a 16th century Italian wheat from the Abruzzi region. Solina has about half the glutin of modern wheat, yet it bakes beautifully. Before the Green Revolution changed wheat, Solina was one of the premium wheats of Italy and it was prized by all. Very rare and expensive in it's day, Solina is almost impossible to find today. Copper Horse Farm has been developing this wheat variety for over a decade and we grown Solina in the mountains of Pennsylvania in a climate that approximates that of Abruzzi. Excellent for both pasta and bread! The flavor is simply outstanding. I make pasta with Solina and can attest - no other wheat even comes close in flavor or texture.
